Recipe: My chocolate delight!

I don’t have the sweetest tooth but like anyone, I do love a bit of chocolate every now and again.

The following recipe comes from my beautiful mother who went out of her way one time I went to visit to make me something sweet she knew I would eat! 

All you need is:

– 2 x bars of dark chocolate (if you are really brave you can go the 90% variety, but I went with the 85%)

– any type of nuts (this time I used brazil and peanuts because that’s what was lying around but macadamias and almonds are also amazing)

– dried fruit (craisins are nice for the sweetness but apricots are also delicious)

– uncrystallised ginger

(You just need a handfull of each of the above items).

Line a small baking tray with baking paper, chop up all your goodies (your chopping doesn’t have to be perfect – just go Jamie Oliver on it), and chuck everything into the bottom of the tray.

Nuts, fruit and ginger

Break the chocolate up into a bowl and melt it in the microwave. It only need a few minutes so keep your eyes on it!

Dark chocolate

Pour the chocolate over the bits and bobs and use a spatula to move the chocolate around so everything is covered. Chuck the tray into the fridge to set and you’re done!
