My Bircher Muesli

I am literally obsessed with this breakfast – maybe you’ve seen it once or twice on my insta story?! Not only does it taste amazing but it’s super easy to make and keeps me full for ages. I actually don’t measure anything except the oats and milk when I make my bircher so you’ll notice words like ‘sprinkle’ or ‘generous swirl’ in the following recipe. Just know that you’d have to work pretty hard to stuff this up so just go with the flow and ‘sprinkle’ and ‘generous swirl’ away. I promise it will taste amazing.

2 x cups rolled oats

2 x cups almond milk

1/4 cup almonds (I don’t bother to chop them)

1/4 coconut flakes

1/4 cup cranberries

1/4 cup pepitas

2-3 tablespoons of chia seeds

generous sprinkle of cinnamon (cover everything)

generous swirl of honey or malt syrup

sprinkle of Mingle Stella seasoning

four heaped spoonfuls of yoghurt (or as much as you need to mix through)

Just mix everything except the yoghurt into a big bowl, cover with glad wrap and put in the fridge. Once it’s all soaked up (it will need a few hours) stir the yoghurt through and pop it back in the fridge overnight. I’m not super fussy on the yoghurt I use but I usually opt for Jalna.

Serve this amazing bircher with sliced banana and another sprinkle of the amazing Mingle Stella seasoning.
